Healthy Appetizer: Roasted Grape Crostini

Yearning for a savory appetizer that won’t bust your belt? This gourmet style crostini recipe uses fruity grapes, the earthy flavor of rosemary and creamy low fat cheese to tantalize even the most finicky taste buds. Perfect to serve for an elegant dinner party or a quiet night at home.

Roasted Grape Crostini

2 cups seedless red grapes, cut in half lengthwise

2 Tbs extra virgin olive oil

1 Tbs fresh or dried rosemary

Salt and freshly ground pepper, to taste

1 package of Laughing Cow or reduced fat herb flavored spreadable cheese

1 loaf “day-old” baguette, sliced into ¼” slices

1 clove raw garlic


Preheat oven to 400 degrees F. In a roasting pan, combine grapes with olive oil, rosemary, salt and pepper. Cover with foil and bake until tender about 30 minutes. In the meantime, slice baguette into ¼” slices. Arrange on a baking sheet and bake until lightly toasted, about 10 minutes. Allow to cool. Rub clove of garlic across each slice of baguette. Spread each slice of baguette with about 2 tsp of cheese. Top with roasted grapes and rosemary.
