Rich in Omega 3 fatty acids, salmon has been proclaimed as one of the world’s healthiest foods. Recent studies have shown that these Omega 3 fatty acids may support healthy joints, cognitive function, cardiovascular and eye health, while decreasing the risk of certain cancers. Rich in protein, a typical 3 oz serving is only about 100 calories. Try this delicious recipe and get “wild” for salmon.
Pecan Crusted Salmon
12 oz salmon fillet, cut into 4 pieces (preferably wild caught)
½ cup light mayonnaise
¼ cup parmesan cheese, grated
1 Tbs fresh or dried rosemary
¼ cup pecans, toasted and chopped
Salt and freshly ground pepper, to season
Season salmon with salt and pepper. Place salmon skin side down on a non-stick baking sheet. Bake until thoroughly cooked about 12-15 minutes or to an internal temperature of 145 degrees. In the meantime, mix mayonnaise, cheese and rosemary in a bowl. Brush mayonnaise mixture on top of cooked salmon. Sprinkle with toasted pecans. Place under broiler for additional 2-3 minutes until pecans brown slightly. Serve.
