Sweet potatoes are a great alternative to regular baking potatoes. They pack more fiber, iron, and Vitamin A and their sweet flavor will almost have you think you’re cheating!
Baked Sweet Potato Fries
2 medium sweet potatoes, cut into ½ inch strips
1 Tbs Extra Virgin Olive Oil
¼ tsp ground cumin
¼ tsp ground cinnamon
¼ tsp cayenne pepper
Salt to taste
Preheat oven to 400 degrees F. Arrange sweet potatoes in a single layer on a large baking sheet. Drizzle with olive oil and spices. Combine. Bake for 30-35 minutes or until all sweet potatoes are fork tender.
