Who says you have to give up the comfort feeling of creamy mashed potatoes. By swapping the potatoes for cauliflower, you can still have all the comfort, while reducing the number of carbs and increasing the vitamin and antioxidant impact.
Cauliflower Mash Up
4 cups of cauliflower florets
2 cloves of garlic
1 Tbs Extra Virgin Olive Oil
Salt and peppr, to taste
2 Tbs low sodium chicken broth
Fresh chives, for garnish
Directions:
Preheat oven to 400 degrees. On a large baking sheet, place cauliflower florets and garlic cloves. Drizzle with olive oil and salt and pepper, if desired. Cover sheet with aluminum foil and bake for 40-45 minutes until cauliflower is fork tender. Place in a food processor or high-powered blender (Vitamix). Add chicken stock and puree until smooth. Garnish with fresh chives and serve.
