Eggs are not just for breakfast anymore. They are one of the best sources of protein around and are an “eggcelent” source of iron, vitamins, minerals and carotenoids. And without having to worry about the cholesterol content affecting our lipid profile, we can enjoy them every single day!
2 Hard-boiled eggs, peeled*
½ tsp Dijon mustard
1 tsp plain Greek yogurt
Salt and pepper, to taste
Pinch of paprika
Remove yolks from eggs and place in mixing bowl. Add mustard, Greek yogurt and salt, if desired. Spoon mixture back into each egg white half. Sprinkle with pepper and paprika. Serve chilled.
*How to make hard boiled eggs:
Place eggs in a pot and cover with cold water by 1 inch. Bring to a boil over medium-high heat, then cover, remove from the heat and set aside 8 to 10 minutes. Drain, let cool in ice water for 2 minutes, peel and serve.
