Spiced Carrots

Spiced Carrots


1 Tbs Extra Virgin Olive Oil

4 cups of raw carrots, sliced

¼ cup water

1 Tbs fresh lemon juice

Salt, to taste

½ tsp cinnamon

½ tsp ground cumin

Dash of cayenne pepper, to taste



Heat oil in a nonstick skillet over medium heat. Add carrots and allow to soften a bit, about 3 minutes. Add remaining ingredients, bring to a boil, cover, reduce heat to medium and simmer for about 6 minutes or until carrots are fork tender and liquid is reduced. Serve.
