No Bake Chocolate Espresso Bites

These no bake chocolate espresso bites are the perfect snack when you want something sweet but don’t want to reach for the candy bowl. Dates not only provide a natural sweetness that tastes too good to be true, but are good sources of fiber, calcium, iron, potassium, magnesium, and zinc.


No Bake Chocolate Espresso Bites


½ cup of pitted dates (I use Medjool dates)

1 cup of walnuts

2 Tbs cocoa powder

1 Tbs instant espresso powder

1 tsp pure vanilla extract

Pinch of sea salt

¼ cup of pecans, finely chopped and toasted (optional)

¼ cup of unsweet coconut flakes, toasted (optional)



Line a baking sheet with parchment paper.

Combine the dates, walnuts, cocoa powder, espresso powder, vanilla and salt in a food processor. Pulse until mixture forms a ball. Roll into balls and coat in toasted pecans and/or coconut flakes, if desired. Place on lined cookie sheet and refrigerate until ready to serve.
