Your eyes are not deceiving you, there are blueberries IN the burgers. This may seem like a very unconventional recipe but when you think about it, blueberries make perfect sense. Grass fed beef (which is my preferred beef of choice) is very lean, therefore, berries add the perfect amount of moisture without adding any extra fat! The original recipe I found called for blueberries but you can easily add raspberries, blackberries, boysenberries, or even cherries.
Blueberry Brie Grass Fed Burgers
1 lb ground grass fed beef
½ cup fresh or thawed frozen blueberries (or mixed berries)
½ tsp seasoned salt (optional)
½ Tbs coconut oil
Brie cheese slices for garnish
Fresh rosemary sprigs for garnish
Heat griddle on high heat. Using a blender or Vitamix, puree berries until smooth. Add to beef and mix well. Add salt if desired. Form into 3-4 oz patties. Add coconut oil to griddle and when oil begins to sizzle, add patties. Cook about 4 minutes per side or until desired doneness. Burgers should be nice and charred on outside. Add cheese to the tops of the burgers during the last minute of cooking. Garnish with fresh rosemary sprigs and serve immediately.
