Forget about the chips and bring on the popcorn! Plain popcorn provides whole grains, fiber, and antioxidants. Just be sure to hold the butter! This recipe uses pesto as a better-for-you alternative to what you’d get at the theater. No movie required!
1 mini bag of light popcorn (Try Skinny Girl Lime & Salt)
1 Tbs prepared pesto
½ Tbs grated parmesan cheese (optional)
Pop popcorn according to directions and allow to cool slightly. Pour into a serving bowl and drizzle pesto and optional parmesan cheese over popcorn. Mix to combine. Serve immediately.
